Lately, there has been a lot of hype around traditionally sweet breakfast items turned savory. I have already posted my favorite savory pancakes recipe. While savory oatmeal has apparently been given a very basic new nickname, “svoats“. Which now brings me to my newest salty breakfast obsession, savory yogurt.
Let me clarify, savory yogurt is by no means a new thing. If the thought of ditching the berries, granola, and honey for tomato, cucumber, and pesto sounds absurd, think about it in a different light. Have you ever had a gyro with tzatziki? What about the last time you ate indian food? Were the spicy curries served with a cooling yogurt raita? Or have you ever swapped out mayo for some tangy greek yogurt in a dressing recipe? Chances are, you have. Although savory yogurt has been around for centuries, I’m so glad that it has been gaining new attention and popularity recently. Why? Because it’s f-ing delicious.
Here is one of my favorite ways to eat savory yogurt. As always, feel free to modify this recipe to your personal taste. Each ingredient adds something special. The pesto is herbaceous, cucumbers add a satisfying crunch, tomatoes add a sweet juiciness, the olive oil adds a light floral note, and the greek yogurt serves as decadently creamy/tangy base. Oh, and if you have it on hand I prefer to finish this recipe with flaked sea salt for texture and added pops of savoriness.
Give it a try and let me know what you think! I would also loveee to see any of your other savory breakfast creations! Use the hashtag #GoStuffYourself on instagram or just shoot an email to Kelsie@gostuffyourself.com. It’s always a pleasure hearing from you guys!
- 1/2 cup plain greek yogurt
- 2 tablespoons of pesto (Store bought is fine, but I like this recipe from TheKitchn)
- 1/3 cucumber, diced
- 1/2 tomato, diced
- drizzle of olive oil
- flaked salt, red pepper flakes, and black pepper to taste
Gently swirl together greek yogurt and pesto in a bowl. I like to have ribbons of pesto in mine, but feel free to combine it how you like. Top with rest of ingredients: cucumber, tomato, olive oil, salt, back and red pepper flakes. Finally, dig in to your healthy and satisfying bowl.
